Creative and Ingenious Kitchen

The culinary tradition of Morocco Saharan testament to the creativity and ingenuity of nomads: it is perfectly suited to the austerity of territories and their resources.

 

The basic ingredients are camel milk and camel meat, favored both for their taste and nutritional qualities and their virtually permanent availability. Cereals and dried fruit are not left out: they fear not the nomadic journeys and may not rot or go bad.
